Abstract: 
Food fraud is defined as the deliberate act of falsifying food with the intent of economic gain. In recent years, this practice has become more and more common. The increasing need of fast and reproducible methods for biomarker discovery and identification in the context of food authentication, has therefore lead to the development of novel sampling methods. Aim of this work is the development and investigation of infrared laser based sampling method nanosecond infrared laser (NIRL) for the detection of biomarkers with matrix assisted laser desorption ionization mass spectrometry (MALDI MS).
