Title: Treiber und Hindernisse der Planetary Health Diet : eine qualitative Untersuchung zur Einführung und Umsetzbarkeit einer nachhaltigen Ernährungsform in Deutschland

Abstract: 
The food system is a major contributor to the climate crisis while endangering human health. Environmentally damaging impacts are becoming increasingly visible and highlight the urgent need for change in human behaviour. It is clear that a dietary turnaround is needed now to reduce the fatal consequences of environmental degradation and the deterioration of humanity's physical and mental health. Now we still have the chance to initiate the change and prevent tipping points. This paper addresses the question of the extent to which nutritional reform can be achieved in Germany through the Planetary Health Diet. Opportunities and challenges in practice were identified through a semi structured interview. With the help of qualitative content analysis according to Mayring (2015), the statements of the explorers were evaluated and interpreted. According to the survey the challenges lie in the out-of-home consumption and the low flexibility associated with the Planetary Health Diet. The opportunities lie in the enormous reduction of environmental damage and the improvement of physical and mental health. Since the challenges significantly affect the acceptance of a dietary reform, adjustments and compromises are necessary to achieve change. The transformation must take place at the political, economic and societal levels in order to educate and promote measures that support Germany in the food sector towards sustainability.

Das Ernährungssystem trägt zu einem Großteil der Klimakrise bei und gefährdet gleichzeitig die menschliche Gesundheit. Umweltschädliche Auswirkungen werden immer sichtbarer und verdeutlichen den erforderlichen Wandel des menschlichen Verhaltens. Eine Ernährungswende ist jetzt notwendig, um die fatalen Folgen der Umweltzerstörung und der Verschlechterung der körperlichen und mentalen Gesundheit der Menschheit zu reduzieren. Jetzt haben wir noch die Chance, die Veränderung zu veranlassen und Kipppunkte zu verhindern. In dieser Arbeit wird die Frage behandelt, inwiefern durch die Planetary Health Diet eine Ernährungsreform in Deutschland erreicht werden kann. Chancen und Herausforderungen in der Praxis wurden anhand eines Leitfadeninterviews identifiziert. Mithilfe der qualitativen Inhaltsanalyse nach Mayring (2015) wurden die Aussagen der Explorand:innen ausgewertet und interpretiert. Die Herausforderungen liegen hierbei im Außer-Haus-Verzehr und der geringen Flexibilität, die laut der Befragung mit der Planetary Health Diet einhergeht. Die Chancen liegen in der enormen Reduzierung von Umweltbelastungen und der Verbesserung der körperlichen und mentalen Gesundheit. Da die Herausforderungen maßgeblich die Akzeptanz einer Ernährungsreform beeinträchtigen sind Anpassungen und Kompromisse notwendig, um eine Veränderung zu erreichen. Die Transformation muss auf politischer, wirtschaftlicher und gesellschaftlicher Ebene stattfinden, um Aufklärung und fördernde Maßnahmen treffen zu können, die Deutschland im Ernährungsbereich Richtung Nachhaltigkeit unterstützen.
