dc.description.abstractDie Aronia melanocarpa ist eine am Strauch wachsende Wildbeere, die zu der Familie der Rosengewächsen gehört. Ursprünglich stammt sie aus Nordamerika und wurde Anfang des 19. Jahrhunderts über Russland und Osteuropa nach Mitteleuropa gebracht. Seit 1976 wird die Beere rund um Dresden angebaut. Die Pflanze ist genügsam und zeichnet sich durch eine hohe Frostresistenz aus. Die Aronia ist auch sehr resistent gegenüber Krankheiten und Pilzen, sodass auf den Einsatz von Pflanzenschutzmitteln größtenteils verzichtet werden kann. Die blauschwarze Beere hat einen adstringierenden Geschmack und eignet sich daher eher für die Verarbeitung als für den Frischeverzehr. Aufgrund des hohen Anteils der farbgebenden Anthocyane wird die Frucht neben der Herstellung von Lebensmitteln auch als natürliches Färbemittel eingesetzt. Neben der Tatsache, dass die Aronia einen hohen Gehalt an Sorbit aufweist, ist in erster Linie der Gehalt an sekundären Pflanzenstoffen bemerkenswert. Durch die sekundären Pflanzenstoffe Anthocyane und Proanthocyanidine verfügt die Beere über eine außerordentlich starke antioxidative Aktivität. Dadurch kann der oxidative Stress reduziert und hierdurch wiederum Krankheiten wie Ateriosklerose positiv beeinflusst werden. Des Weiteren werden durch die Aufnahme von Aroniaprodukten die Blutblättchen- funktion und die Blutfettwerte verbessert, was wiederum einen positiven Einfluss auf Diabetes mellitus Typ 2 hat. Gegenüber Mutagenen (z.B. aromatische Kohlenwasserstoffe und Nitrosamine) zeigt die Aronia eine hemmende Wirkung und reduziert aufgrund des hohen Gerbstoff- anteils die Nitrosaminproduktion im Magen. Die Aufnahme von Aroniaprodukten hemmt außerdem das Zellwachstum von Dickdarmkrebszellen. Zusätzlich schützt sie die Magenschleimhaut vor Verletzungen und wirkt entzündungshemmend. Über die Bioverfügbarkeit und den Metaboliosmus der in der Aronia vorkommenden Anthocyane ist bekannt, dass sie nur zu Teil vom menschlichen Körper aufgenommen werden können. Der Metabolismus von Proanthocyanidinen ist abhängig von ihren Polymerisierungsgrad. Die Monomere (+)-Catechin und (-)-Epicatechin können resorbiert werden, während über polymere Proanthoyanidine bekannt ist, dass sie in phenolische Säuren umgewandelt werden.de
dc.description.abstractThe Aronia melanocarpa, also called black chokeberrry, belongs to the Rosaceae familiy and is a on a shrub growing berry. The black chokeberry is native to North America and was carried to central Europe in the 19th century via Russia and Eastern Europe. Since 1976, the aronia was extensively cultivated around Dresden. The plant is modest in growing and very hardy. As the Aronia berry is resistant to illnesses and fungal infections the renounce of pesticides is possible. The blue-to-balck coloured fruit is not edible because of its astringent taste but can be used for food processing. Because of its high fraction of anthocyanins, the berry is also a natural colourant. Due to its high content of sorbitol the amount of secondary plant compounds in the Aroniafruit is notable. Because of the anthocyanins and proanthocyanidins, the berries have a high antioxident activity, which has a positive effect on the health of human beings. Because of the reducing of the oxidative stress, many diseases like atherosclerosis are affected in a positive way. Furthermore, the intake of chokeberry-products improves the platelet aggregation and enhanced hyerlipidemia that causes a positive effect on diabetes mellitus type 2. The aronia berry has an inhibitory effect on the mutagenic activity of polycyclic aromatic hydrocarbons and blockes the production of nitrosamins in the stomach because of its high content of tanning agents. The cell growth of colon cancer can also be inhibited by aronia-products. Besides it protects the gastric mucosa against lesions and shows antiinflammatory effects. For the bioavailability and the metabolism of the anthocyanins in black chokeberries is established, that they could be partially absorbed by human beings. The absobtion of proanthocyanidin depends on its degree of polymarisation. Monomer (+)-catechin and (-)-epicatechin can be absorbed by the intestinaltract and polymeric proanthocyanidins were transformed to phenolic acids.en
